White Chocolate Strawberry Cheesecake. In a double boiler, melt white chocolate. In a medium bowl, combine the graham cracker crumbs, sugar, and melted butter.
Beat in vanilla extract, heavy cream and sour cream. Place the strawberry halves, facing outwards, all around the edge of the tin. (Look at the pictures.) Pour the filling onto the biscuit base. Pour jam over the filling and make swirls using a knife.
Spread the chocolate evenly, covering the whole of the cheesecake base.
Blitz the digestive into a fine crumb and melt the butter.
Strawberry and white chocolate cheesecake is so easy to put together and is perfect for any occasion. Pour over the melted chocolate or sprinkle on some icing sugar. In a double boiler, melt white chocolate.
