What Is A Madeira Cake. Modern variations on the recipe, however, may deviate from this. Madeira cake is a sponge or butter cake in traditional British and Irish cookery.
A cake made by the creaming method, flavoured with lemon (or lime) zest and decorated with a thin slice of fresh or candied citron. Cream the butter and sugar together until fluffy. Traditional versions of this cake are given a lemon flavoring.
Let cool and wrap cakes in parchment paper or wrapping paper and place them in boxes.
Add eggs one at a time along with one tablespoon of flour mixture for each egg.
Back then, it was a custom to serve the cake with the famous Portuguese Madeira wine. Recipes for it call for a bit more flour than your typical Victoria Sponge, but a Madeira is nonetheless lighter than a typical pound. The Madeira has more flour, or more flour equivalent.
