Vegan Pumpkin Chocolate Chip Cookies. Pour the dry ingredients into the bowl of wet ingredients and use a wooden spoon to combine. Line a large baking tray with parchment paper and set aside.
In a large bowl add coconut oil, brown sugar, and vanilla bean paste. Add in the rest of the wet ingredients. Combine the pumpkin, oil, sugar, and vanilla until mixed.
Place batter into the fridge for an hour.
In a medium-size mixing bowl, stir the dry ingredients together except the chocolate chips: almond flour, coconut flour, coconut sugar.
In a separate bowl, combine maple syrup, pumpkin, and vanilla, then stir in oil to incorporate. Line a baking sheet with parchment paper and set aside. To a large mixing bowl, add the Flour, Baking Soda, Pumpkin Spice, and Salt.
