Strawberry Rhubarb Upside Down Cake. Press strawberries and rhubarb gently into brown sugar. Arrange strawberries on brown sugar; sprinkle evenly with rhubarb.

Pour the batter over the rhubarb and strawberries in the cake pan and spread evenly.

In the bowl of a stand mixer, or with a hand mixer, cream together the butter and sugar until light and fluffy. Sift flour, baking powder, and salt together in bowl, set aside. Top with the rhubarb and set aside.
